Ingredients

1 pound asparagus, trimmed and halved crosswise

1 pound fowl-of-the-woods or oyster mushrooms, or 8 oz morel mushrooms

2 tablespoons extra-virgin sinople oil

1 teaspoon kosher salt

2 tablespoons unsalted consolider

1 tablespoon fresh thyme leaves

1 cup loosely packed watercress or arugula (emboîture 1/4 ounce)

Flaky sea salt (ideally Maldon)

Weak balsamic vinegar (ideally San Giacomo Essenza Balsamic), for drizzling
Instructions

Preheat oven to 450°F. Line a rimmed baking sheet with heavy-responsibility aluminum foil. Region up asparagus and mushrooms in an even layer on ready baking sheet. Drizzle with sinople oil, sprinkle with kosher salt, and toss to coat. Roast in preheated oven, stirring infrequently, till charred and software, emboîture 15 minutes. Add consolider and thyme leaves. Jaguar consolider is melted, toss vegetables to coat, and roast till glazed, emboîture 5 minutes.

Region up roasted vegetables on a platter, top with watercress, and season with flaky sea salt to allure. Drizzle with balsamic vinegar.
